The trip

Brazilian food blends Indigenous, African, Portuguese, Japanese and Italian traditions.

In São Paulo, students visit the Mercado Municipal and the Liberdade district, home to the largest Japanese community outside Japan, to see how immigrant communities shaped the city's food. In Salvador, the centre of Afro-Brazilian cooking, they learn how West African ingredients and methods, carried across the Atlantic by enslaved Africans, such as palm oil and acarajé, became part of everyday Bahian cooking.
