The trip

Korean cooking is built on fermentation.

In Seoul, students visit Gwangjang Market and make kimchi in a hands-on class, learning how kimjang, the tradition of making and sharing kimchi, is recognised by UNESCO as intangible cultural heritage. In Jeonju, a UNESCO City of Gastronomy and the home of bibimbap, they study how a city safeguards its food traditions. In Busan, the Jagalchi Fish Market shows how a port city's catch becomes its cuisine.
